Why bring this up when you probably will not marry a Vietnamese person?<br />

Well you too can seek a deeper connection to a country by spending some time before you go developing your own personal connection to the people and culture.<br />
<br />
The Vietnamese, like many in the world are eager to learn English to advance in business and their professional careers. Some start learning English quite early but lack a native speaker to practice with to improve. That is were you come in; there is many Vietnamese that are online to connect with English speakers to improve their skills. You can explore some aspects of Vietnamese life and what is something that would be interesting to do when you come to Vietnam. This of course is a longer term commitment than hiring a guide but it can become a friendship you can enjoy for years to come.<br />
<br />
Where do you find these eager learners? well I can not endorse any site or service but try a google search <a href="https://www.google.com/search?q=vietnamese&oq=veitnamese&aqs=chrome.1.69i57j0l3.5559j0j4&client=tablet-android-google&sourceid=chrome-mobile&ie=UTF-8#safe=off&q=vietnamese+seeking+english+language+practice" target="_blank">Vietnamese seeking English practice</a> and give it a try.<br />
<br />
I have learnt much from my wife about the beauty of Vietnam and even more via her connections in all regions of the country. It brings a richness to travel that no guidebook can match. You also can learn what to be wary of while you make your way through the country and to understand the rational to some of the things you see here.<br />
<br />
You may not make a lifetime friend eager too show you around the country but you can make friend that will be a resource when you finally do come to Vietnam. At least you may learn more than another cat video on youtube can show you :).<br />
<br />
You can skim through countries with tours that show you the tourist traps or you can spend some time reaching a greater understanding of the people and place that is Vietnam.<br />

When I first saw the village in 2002 it was just a few years beyond dirt floors and mud walls. My wife's family had one of the most modern homes in the village at that time. Still there was no windows and they cooked with wood fire; but a western flush toilet and hot shower made it certainly posh in comparison.</p>
<p dir="ltr">As you walk around the village today it is almost unrecognizable as it has changed even in the three years we have been away. Certain parts bring back flashes of days past but those are becoming less each time we go back. </p>
<p dir="ltr">What was once a small shack is now a four story home that is built like there should be buildings on each side to support its precarious structure. Tall and thin, like a tree alone on the plain. The interesting part is that the families do not normally use the upper floors but build high to show their success for all to see.</p>

places to eat set up where ever there is a spot to cook something. During the
day the building has a shop selling you something or just a bare piece of
pavement but at night it is a restaurant. It can be as small as a single pot, a
table and a few mini (for me) chairs. Hang a small sign and there you go,
restaurateur to the masses. <o:p></o:p></span></div>

am impressed by the ability of people to find a way to survive by their own
initiative. As a lot of the small restaurants I see in buildings are glorified
holes-in-the-wall establishments; the street level restaurants literally are

<span style="font-family: Arial, Helvetica, sans-serif;">I liked the dish once I poured the soup in as the sauce on the noodles was a bit sweet for me. It was a nice small bowl noodles served on the street. I had a interesting moment when I sat on the tiny chair as my squatting skills are poor. You lower your rear until you feel like your going to fall over, then quickly place the chair under you and hope it does not collapse as you rear comes crashing down. Once years ago the chair did collapse to the merriment of the other diners as I ended up sprawled on the dirty pavement. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">As Vietnam grows and modernizes it also starts to have more and more chain restaurants / coffee shops. Yes that can be seen as a unwelcome invasion to all the people wanting a unspoiled country but to me it is a sign that the people are starting to enjoy some of the rewards of their labour. Yes it is more complicated than my simple explanation but I will leave that up to others to discuss.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">When I go to Vietnam I also take time to taste the new tastes that the people are eating in the form of fast food and coffee shops. As these mainly foreign restaurant chains come into Vietnam they sometimes modify their menus and recipes to appeal to the Vietnamese market. Here are some I tried:</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">This was the first fast food chain I ever tasted in Vietnam and it was a life saver for a white guy who missed a taste of a burger and the convenience of a fast food place. Yes it was a bit different than home but after a few months of eating Vietnamese food I needed a burger. You would think I would like their beef burger the most but it was their shrimp burger that I loved.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">2) <a href="http://www.kfcvietnam.com.vn/" target="_blank">KFC</a> yes the chicken place we all know; I took my future wife here years ago to have a taste of North American food (yes not the best example). I have to say the chicken was better tasting than our fast grown variety but the rest of the meal was the same as in Canada. From that first location we saw years ago, I have seen the chain expand at a fantastic rate right across Vietnam.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">3) <a href="http://www.pizzahut.vn/" target="_blank">Pizza Hut</a> We took a few of our younger Family members to Pizza Hut to have a taste of home; of course they liked the non North American tasting pizza rather than the one we liked. The place had some different appies and salads but mostly the same as here. The big thing I noticed that a large pizza there would be considered a small here; we ended up ordering a lot of appies to fill the gap.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">4)<a href="http://bbqvietnam.com/home/index.php?option=com_content&view=article&id=130%3Abbq-chicken-phong-cach-han-quc-ti-vit-nam&catid=38%3Atin-tuc&Itemid=70&lang=vi" target="_blank"> BBQ chicken</a> a Korean place with great chicken and shrimp burgers; had to go there twice for the unique taste. The bbq chicken was great tasting but my wife thought it was not as good as their smoked chicken; tangy and slightly spicy.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">5) <a href="http://www.trungnguyen.com.vn/indexen.aspx" target="_blank">Trung Nguyen coffee shops</a>, a Vietnamese company that makes kick ass coffee that would walk the dead. I love the taste and the shops. I use to frequent<a href="http://www.highlandscoffee.com.vn/vn/index.html" target="_blank"> Highlands coffee</a> but agree with my relatives that highlands coffee is a weak version of the strong brew Vietnamese like to drink. This is not to say that Highlands coffee is not a good place to go as they have a wide assortment of delicious drinks and food besides the coffee. The perfect mix of Trung Nguyen coffee (as formulated by my brother-in-laws' wife) is <a href="http://www.trungnguyen.com.vn/en/2248/trung-nguyen-creative.html" target="_blank">number 5</a> coffee (a blend) with the S type (strong flavour). As we had some weight restrictions I brought back some of their <a href="http://www.trungnguyen.com.vn/en/2237/g7-100-pure-soluble-coffee" target="_blank">G7</a> instant coffee that is pretty good. I should have tried the <a href="http://trungnguyenstore.com/store/1696/weasel-the-king-of-coffee-caphe-chon" target="_blank">weasel coffee</a> but never got around to it as it was expensive.</span><br />

You come across dishes that stick with you forever even if
you never eat them again; fried soup (what I call it) is one of those dishes I
for me. I came across it in Hanoi in 2008. I searched for the restaurant this
time but it had changed owners; also lost was a great little snail soup place
across the street. We stayed at a hotel on the same street at the time so we
knew we had to go back and find it. The pictures I have here are from 2010. The
name I give it is half true as the meat and vegetables are the only fried part
of the dish; the rest is a beef broth Pho. </div>

The soup is special as the frying of the beef and vegetable
gave an added flavour that you do not get with the other Pho. The taste of caramelization
of the meat juices and sugars present in the ingredients gave it a special
taste. Now the problem for us is it also gave a good measure of fat to the dish
that is kind of counter to what we normally do. I also suspect that the soup
may not be a traditional Vietnamese recipe rather a new or invented dish. </div>

Across from our Hotel in Hanoi is a nice small restaurant
specializing in rice rolls, It seems to be well known as it has had a
couple of positive foreign reviews (proudly displayed on the wall) that are
well deserved. The place has been updated and is very clean; the woman
assembling the rolls even wears plastic gloves. While retaining its authentic
taste they have made the food more approachable to the tourist market. </div>

Like most establishments the food is cooked in the front
where passersby can see the whole delicious process. The rice roll batter is
cooked on a linen covered streaming pot of water. This allows the steam to cook
the rice roll batter when it spread thinly on top of the linen. The container
is covered and the batter cooked. At the end the roll is either covered with
the fried ground pork and cloud mushroom then rolled or taken off the pot then
dressed. It depends on the place which way they do it. Lastly the crispy onions
are placed on top along at this place pork fluff. </div>

Now this place is busy and a bit different than most of the
other restaurants around; you stand in a line (or what passes for a line in a
non-queuing country) to get your order and carry it yourself to an available
table. There are no available tables, rather spots at tables you have to hunt
for and squeeze into with other customers. So if you’re by yourself you have to
carry a steaming and overflowing bowl of Pho around looking for a spot to open
up. It must be worth it as the place was packed. </div>

The bowl came with a plate of (chinese) donuts for dipping
and a nice mound of beef that was cut from the handy hanging piece next to the
cook. This place has one person getting the soup, one getting the meat and one

The taste was fabulous and the best Hanoi style Pho I have
had yet; beefy goodness in a bowl. The other prominent taste was the added
Vietnamese green onions. Again I qualify this as Hanoi style Pho as it was not
what would be called Pho in the south or at home. This is the original taste of
what our Pho was when it started its evolution into the Pho we recognise in
Vancouver. </div>

My belief is that food evolves along with the people and
their environment. Traditional dishes and a cuisine like the people are a
product of their environment. Vietnam is rapidly evolving as is the cuisine that is part of that changing society.
Ideas, like people are moving and changing at an amazing pace as such the food
is being influenced by that change. Food and the ways to prepare it is moving
around the country and changing the menus in even the smallest village. </div>

The Pho we serve at Mui Ngo Gai is a result of people moving
around Vietnam and during the Diasporas have occurred 1) during the separation
of North and South in the early 1950s 2) after the end of the Vietnam War with
its the mass movement of people overseas. You can taste the influence of this
change of environments on the taste of the soup and on what we expect it to
taste like. The north serves up a bowl of Pho that is beefy but has very little
spicing (not spice as in hot rather in strength of added spices) of the broth.
It is a good satisfying bowl of soup with the right noodles and beef but lacks
the aroma we expect. In the south the soup takes on a bit of a more spicy tone
but not as much as in Vancouver. The broth in Vancouver is much more aroma and
better quality of beef. </div>

In each place we have had Pho over the years (North, South
and at home) we have found each taste authentic to the place and each bowl
satisfying in its own way. When you look at the journey this soup has taken
with the people who have made it, I am very appreciative at evolution of
various tastes of this soup and of the strength of the people who took it with
them to their new homes. There is no one right taste of Pho, there is just the
taste you know to be Pho.</div>

By check mark I mean our soup has an authentic Hanoi taste
(we knew that when we developed it) as found on the streets of Hanoi. We have a
favorite place we go and have a few bowls of Pho Ga every time we stay in
Hanoi; it is in the old town close to Com Que restaurant. When we first went
there it was an impressive little restaurant that had tables right up to the
street, but the rules have changed and they have to keep the tables off the side
walk. Amazing when you see most of the one pot restaurants set up on the side
walk and they never have an issue with the police. </div>

The one thing that has not changed is the Pho Ga, it is near
perfect as a chicken soup can be made. There are couple of different variations at this restaurant and
other dishes too. We tried some of the ready to eat food but were not very
impressed so we will stick with the soup we love.</div>

The soup base is like ours and the meat they served us was
cut from the breast; except for the skin on the meat the soup tasted like ours.
I was impressed with the work of the family in keeping our taste so close to
the real street taste of Hanoi. The soup was a reminder of home and the many
bowls of chicken soup I have eaten at the restaurant. All I needed was our
satay oil to add at the end to spice it up and blast my senses into overdrive.
Of course if I had did that I could not have tasted the other bowls we ordered
to eat too. In Vietnam the portions are much smaller than ours so we normally
have a couple of bowls if all we are eating is soup.</div>

Next ice cream, a maybe secret location (not many tourists) that is filled with Vietnamese people enjoying a treat that has been in Hanoi since 1958 Google site: <a href="https://plus.google.com/114211907725871143935/about?hl=en" target="_blank">Kem</a> Their website: <a href="http://kemtrangtien35.com.vn/" target="_blank">Kem Trang Tien</a>.<br />

Loved the ice cream, the rice ice cream bar was great, texture and favour was unique. I did not take photos of the ice cream as it just looked like ice cream.<br />

You walk around until you spot something your want to eat (signs up every every where), you sit down and enjoy. Of course some places sitting is difficult as the chairs are kid size and western butts barely fit them. You have to half squat to get down to them, then hope they hold your weight.<br />

It is a small grubby place with great food, a perfect Hanoi hole in the wall restaurant. Never disappoints my expectations and it is located in a great spot where you can watch the river of people walk by. This place is you pre-cooked food on display restaurant were there is a great selection all day long.<br />

and on that are the thousands of ways it is done in each village or household.
To most people back in Canada you taste one or two versions that the restaurant
you go to prefers to make and sell. Of course in Canada the barbeque is done
normally over a gas fired barbeque that leaves its own signature taste on the
meat. Even though the demands of a busy restaurant in Vancouver dictate the use
of natural gas, the best flavour results from the techniques that have not
changed much since they were perfected years ago in simple family homes in
places like where we are staying.</div>

The pork we are using is butchered daily as such is a bit
tougher than what we get at home; then marinated with a grated root (in the
same family as ginger) and mixture containing fish sauce. </div>

Once the fire dies away and there is a good supply of hot
coals the cooking can commence. The meat skewer is stuck into a freshly cut piece of bamboo stalk; which is used as it allows the skewer to be stuck in it and it will not burn. There it is carefully watched as the meat can burn quickly if allowed to be close to the fire too long as the grated root catches fire quickly.</div>

The result is crunchy on the outside with a delightful taste
that is a combination of spicing and technique. I am sure the corn leaves a
flavour note but without a comparison it is hard to tell what part of the
flavour comes from the corn. The meat is tougher than ours so I end each meal
flossing and brushing my teeth but if I was as skilled as the locals I would
just need to use the bamboo tooth picks they have.</div>

We eat this simple dish at home a lot as it is quick and tasty. Boil a veg, take a boiled egg and mash in maggi (brand name) to dip the veggy. You can add hot peppers for extra punch and taste.<br />

Those ribs were similar to the Peking style ribs found in Vancouver Chinese restaurants but they had a extra dimension a bit of a fruitiness that was not citrus. A bit chewy, that is normal for here but big flavour that makes this dish a winner for me.<br />

At the church it was a bit of an assembly line with four weddings being done in one shot. No single spot light here for the bride, there was three other brides doing the same thing at the same time. Kind of "I do" repeated eight times in a row with wedding handers, photographers, videographers, witnesses and priest crowded into the event. I tried to take a few photos but it was a confusing scene of movement and action to get all the weddings done</span>.</div>

restaurant serving precooked dishes that are the ultimate in fast food.
Quick and tasty is the trade mark of a busy small restaurant as to not
meet that requirement is to perish as there is competition all around.
We walked about 5 minutes from our hotel to find a great place to eat. </span><br />

the outside it is not much to look at and the inside not much different
but as we were here for the food not the ambiance it was OK. The food
is pre-cooked then placed in a glass case at the front for the customer
to see before they buy. No whimpy re-fridgation or four hour hold time;
this food sits in the heat of the day until sold. Totally unsafe and so
delicious it is worth the investment in anti-diarrhea meds
just in case. I have to say I have been very lucky eating at these
places and have profited from the risk. </span><br />

everything that I see in the display but know it will be impossible as
the food is filling. We order the items we want and they come on a plate
of rice. A bowl of soup comes with the order along with any sauces that
are needed. Digging in is always a delight as we get to taste the

you can get in Vietnam. The food can be so much better sitting on the
floor in a small dark family room in behind their road side business. It
is nothing fancy but it busts with flavor that has been refined by
years of cooking with simple but fresh local ingredients. All
accompanied by the refrains of 'House of the rising sun' being played on a
cell phone as the electricity is off in the area. A common occurrence
in Vietnam, roving blackouts. As such no pictures of the delicious food we were served in the dark, the barbequed pork was perfect.</span><br />

<span style="font-family: Arial,Helvetica,sans-serif;">Countless meals made in
millions of Vietnamese homes everyday and I have had the honor of being a
guest to a few over the years and I am normally very impressed with
what I have tasted. That is overlooking the raw duck blood dish I had
the misfortune to taste in a village several years ago. Hard to spit it
out when you are the guest of honor and they store watching you eat it.
The must have noticed me turn a paler shade of white as I just about

based dessert from the front of their house in the evenings to passersby
on the main road. Being on a noisy dirty high traffic road is a
business opportunity that does not go to waste. The family assembles all
the ingredients bananas, coconut, rice and creates the dish from scratch.</span><br />

banana is wrapped in a mixture of shredded coconut and sticky Rice
then grilled over an open fire at their roadside stand. This would be
hard to do at home as I have yet to taste a banana at home that tastes
this intensely banana flavored, we truly miss out on the the real taste
of bananas at home.</span><br />

sweet bread made with all purpose flour and sesame seeds. The mixture
is rolled out and deep fried into a sweet pita like bread. The final
product was slightly crunchy on the outside and soft inside, sightly
sweet and oily a delicious treat.</span><br />

The set up is off sales booths around the outside of the place and restaurant seating in the middle. Not fancy but a good place to get out of the sun and enjoy some good food. It is not a tourist place but you do see a few in there trying out the the food. </span><br />

They have various stations making and selling food to the customers on the street and for the orders from the restaurant. <span style="font-family: Arial,Helvetica,sans-serif;">Next for me was a bowl of Banh Canh Cua that was tasty with crab and shrimp. The noodles were perfect and everything satisfying to the palate. It did remind me of the best bowl I ever had of this soup. It was a tiny place run by a woman that had only two soups on the menu; the whole menu was the two soups. She had only the two dishes but they were excellent. I was a daily stop for me for about a week when my wife was away doing business. The place was gone the last time I was here and I miss the food and the friendly service.</span><br />

The place is still a stunningly beautiful park like restaurant that is a great introduction to the food of all Vietnam. I have posted about this place before so i will just say it is still a place that I recommend to those that want to taste some of the regional food without having to travel all of Vietnam.<div dir="ltr">
